After dark chocolate and milk chocolate, then white chocolate, today here is the Ruby Chocolate! There is now a fourth type of chocolate, the first in 80 years, when white chocolate was officially recognized. It was the company  Barry Callebaut who announced this discovery a few days ago, creating the Ruby Chocolate from ruby cocoa beans, a variety with a very particular color. Its taste is also very different, described as a tension between berry-fruitiness and luscious smoothness. A new taste experience to try!
